One Pot Spinach Brown Rice ...


One Pot Spinach Brown Rice..  the name itself gives healthy and mouth watering feeling, isn't it. One pot meal are easy to cook, just add all the ingredients in a pot set the timer and meal is ready to eat. Today I am sharing one pot delicious recipe which is easy to cook and healthy.
We are going to cook One Pot spinach brown rice with the goodness of green leafy spinach rich in vitamin A and C, Beans/Kidney seeds/Rajma rich in protein and fiber. All these make it a perfect healthy meal. So let try this dish...
Preparation Time: 10   Cooking Time: 20   Total Time: 30  
Makes 3-4 servings 
Ingredients:-
1 cup brown rice rinsed and drained. 
2-3 cups fresh spinach leafs.
2 tomatoes chopped.
1 onion diced.
1 cup boiled Kidney seeds/beans/Rajma.
1 tbsp finely chopped garlic.
2 cups vegetable stock or water.
1 1/2 tbsp curry powder.
1 tbsp Olive/canola oil or refined oil
Salt and pepper to taste

Method

1. Add oil in Pot and heat on medium flame. Add garlic and saute until fragrant for about 20-30 sec.

2. Add chopped onion and saute until translucent. Now add chopped tomatoes and cook then until they get soften for about 2-3 minutes.

3. Add spinach leafs, beans, brown rice and cook for few minutes. Now add water or vegetable stock and bring the mixture to boil. 

4. Add curry powder, pepper and salt in it. cook the rice on low heat for around 20 minutes (or until rice is tender). Cover the pot with lid while cooking. the cooking time of brown rice depends on the quality and variety of brown rice.

5. After 20 minutes check the rice are cooked or not. Turn off the heat and Serve hot and enjoy the delicious Spinach brown rice.

Cooking Tip: 
1. Soak the rice for around 30 minutes before cooking so that these get cooked fast.
2. You can also pressure cook the rice. 

How to serve
1. Garnish the rice with spinach leaf, tomato before serving

2. Serve hot with low fat curd or Raita..
