Vegetable Manchurian with Healthy Twist..


Vegetable Manchurian so called Veg Manchurian is a very common and popular Indo-Chinese dish. People enjoy in different forms dry as snacks/appetizer and with gravy as main course dish served with veg fried rice and Hakka Noodles. 
Veg Manchurian is made of deep fried mixed vegetable dumplings made of cabbage, carrots, beans & spring onion and  tossed in Chinese sauces. It is purely your choice you can added more vegetable like bell pepper, cauliflower etc.  
As this dish is deep fried dumplings of vegetables but today  we will give some healthy twist by replacing some of the key ingredients by healthy ingredients like corn floor replaced with Ragi flour or oats flour, using olive oil/canola oil for deep frying etc. Ragi is whole grain which is gluten-free, rich in fiber that helps with weight loss and diabetes, packed with calcium, good carbs, amino acids and vitamin D.  So let try this dish...

Makes 4-6 servings 
Ingredients:-
For The Vegetable Balls/Dumplings
3 cups finely chopped vegetables cabbage, cauliflower, beans, bel-pepper etc.. 
1 1/4 cups carrot , grated
1/2 cup chopped onions
2 tsp finely chopped green chillies
1 tbsp finely chopped garlic
2 tbsp Oats Flour
5 tbsp Ragi flour
salt and to taste
Canola/olive oil for deep-frying


For The Sauce
1 tbsp garlic (lehsun) , finely chopped
2 tsp finely chopped green chillies
2 tsp finely chopped ginger
1 cup clear vegetable stock or water
1 tbsp soy sauce
1 tbsp oats flour mixed with 1 cup of water
2 pinches of sugar
2 tbsp olive/canola oil
salt to taste

Method
For the vegetable ball/dumplings

1. Combine the chopped mix vegetables, carrots, onions, Ragi flour, garlic, green chilli, salt and pepper in a bowl and mix well using your hands to make the vegetable dumplings. add water to maintain the better consistency. 

2. Shape spoonfuls of the mixture into small balls/dumpling.

3. Deep fry a few balls at a time in hot canola.olive oil until golden brown. Drain on absorbent paper and keep aside till we prepare the sauce for these.

For the sauce
1. Heat the oil in a wok or frying pan on a high flame. Add the garlic, green chillies and ginger and stir fry over a high flame for a few seconds.

2. Add the vegetable stock, soya sauce, oats flour paste, sugar and salt and simmer for a few minutes to make the sauce. if you want to make dry then add vegetable stock/water accordingly.

How to serve
1. Just before serving, put the vegetable balls in the sauce and bring to a boil.

2. Serve hot with brown fried rice or with noodles.

    1. Thanks Anita for trying the recipe . It is another twist you have suggested baking the the dumplings instead of frying. I will definitely try this. Sure I will post new recipes as i cook.
