Carrot Kheer



Desserts and sweets play important role in Indian food. Without these food look like incomplete. Kheer takes up significant share in it  sweets and desserts. Kheer is easy to prepare and having irresistible taste and heath benefits. Today we will talk about Carrot Kheer recipe where we use fresh and juicy Carrots as main ingredients. Carrots are rich on dietary fibers, antioxidants and B carotene. The use of dry-fruits and cardamom powder add great taste to your taste buds.

Makes 4 servings 


Ingredients:-

2 tbsp Ghee (Optional)

2 cup grated Carrots

1 cup Milk

1/4 tsp cardamom powder
5-6 Cashew nuts broken into pieces

5-6 raisins 

2 tbsp Jaggery (Gudd)
Method:-

1. Peel and grate the carrots.

2. Heat 2 tbsp ghee in non-stick or heavy bottomed pan over medium flame. Now shallow fry the dry fruits and keep them aside.

3. Now in the same pan add the grated carrots and saute them for 4-5 minutes. stir continuously over medium flame.

4. Now add milk, mix well and bring it to boil over medium flame. when it start boiling slow down the flame, cook it for 5-6 minutes, stir in between.     

5  Add jaggery according to taste. Keep in your mind carrots are having natural sweetness. cook until it starts to thicken for 5 minutes, stir continuously to avoid burning of carrot and milk.

6. Add cardamom powder, mix well and turn off the flame. Allow it to cool down at room temperature.

7. Transfer to serving bowls and garnish with the nuts and raisins. Serve chilled or warm depends on you. 

Healthy Tips: you can replace suger/Jaggery with honey also.
