Tangy Rice Vermicelli Upma

Today we will try something with Rice Vermicelli, We will make this with different ingredients to make Tangy Rice vermicelli. It is too yummy in taste, liked by all family member of all age from kids to elders. It is easy to cook and you can cook in minutes even you are tired after a long working hours. Its is full of energy and Power back of nutritious. The refreshing aroma and taste of lemon, colors of different veggies, Olives and tangy flavor of jalapenos will refresh you and fill with energy. Preparation Time: 5   Cooking Time: 10    Total Time:     Makes 4 servings 

Ingredients
1 tbsp Black olives
1 tbsp Jalapeno
salt to taste
2 tsp Sambar masala
1 tsp mustard seeds ( rai / sarson)
2 tsp urad dal (split black lentils)
1/4 cup raw peanuts
1/2 cup finely chopped onions
1/2 cup finely chopped Red Bell Pepper
1/2 cup finely chopped Yellow Bell pepper
2 green chillies
5 cups water to boil vermicelli

Method

1. Put Pan on gas and boil 5 cup water to boil the vermicelli, add 1/2 tsp salt and 1 tsp oil. Cover and cook about 8 to 10 minutes or till the vermicelli turns soft. Drain and keep aside

2. Meanwhile Heat the remaining 2 tsp of oil in another broad non-stick pan and add the mustard seeds and urad dal and peanuts.

3. When the seeds crackle and start popping up, add the onions and green chillies and all veggies sauté on a medium flame for 1 to 2 minutes.

4. Add the vermicelli, lemon juice and a little salt, sambar masala, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.

5. Now time to plate Serve hot. Garnish the plate as per your imagination to give you a feel. You can serve this with coconut chutney.
